Ingredients (for 3-4 servings)

  • 400 g Creativeaty Chunks Curry
  • 400 g green beans, trimmed and halved

  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 red chili pepper, finely chopped (seeds removed if desired)
  • 1 piece of ginger, about 2 cm, finely chopped
  • 200 g Basmati rice
  • 1 tbsp rapeseed oil
  • Salt and pepper to taste
  • 1-2 tbsp curry powder
  • 200 ml coconut milk (unsweetened)
  • 200 ml vegetable broth

Instructions

  1. Cook the Rice: Prepare the Basmati rice according to package instructions. Keep warm.
  2. Prepare the Vegetables: While the rice is cooking, trim and halve the green beans, thinly slice the carrots, cut the onion and bell pepper into strips, finely chop the chili pepper, and peel and chop the ginger.
  3. Sauté the Chunks: Heat the rapeseed oil in a large skillet or wok. Sear the Creativeaty Chunks Curry over medium-high heat until golden brown. Remove from the skillet and set aside.
  4. Sauté the Vegetables: In the same skillet, sauté the onions until translucent. Add the ginger, chili, carrots, green beans, and bell pepper, stirring continuously for about 5 minutes.
  5. Add Spices and Liquid: Season the vegetables with curry powder, salt, and pepper, and briefly toast the spices. Add coconut milk and vegetable broth, stir well, and let simmer for about 10 minutes over medium heat until the vegetables are tender but still crisp.
  6. Return the Chunks: Add the seared Creativeaty Chunks Curry back into the skillet, stir well, and cook everything together for an additional 2-3 minutes.
